Well it has been way too long since last posted on my blog :(. I decided to stay away from social media over Christmas and New year so that I could really take in all the festivities with my friends and families and since then? Well, life has done that thing where it just gets in the way!
The good news is that while I haven’t been able to post anything in a while, I have been spending a large amount of time in the kitchen baking and coming up with new ideas, so there will be plenty to come soon!
Now… the reason we are all here, pancakes! It’s pancake day tomorrow and I can’t wait! Any excuse to eat pancakes for dinner, am I right?!
I have got the easiest pancake recipe for you, three ingredients and a maximum of three minutes to prepare and I promise they taste great too!
Now I know that everyone has their preference with pancake toppings, but I haven’t found anything that beats Nutella and banana, if you have room for an extra pancake, please try it! Here’s a picture of my dream Stack!
- 1 egg
- 300ml milk (you can subsistute with almond milk), I used semi-skimmed
- 150g self-raising flour
- Toppings of your choice
All you need to do is mix the three ingredients together until incorporated (I told you it was easy!).
I used my nutri-bullet and just gave it a quick 30 second blitz until the mixture is nice and thick and slightly bubbly on the surface. If you don’t have one you can simply whisk or use any other sort of food processor in the same way. This recipe will make around 500ml of mixture and you will easily get 10 pancakes out of it, obviously it all depends on how big you want to make them!
I put the mixture in to a pouring jug to make life easier, then place a non-stick frying pan on a medium heat for around 30 seconds and when it’s nice and hot you’re ready to start making pancakes! Pour your mixture in to the pan until it spreads to a size you are happy with, the pancakes need around 1 minute on each side but this can vary.
You will know when they are ready to flip because the sides will begin to become unstuck from the pan and there will be lots of little bubbles/holes on the surface.
This is a pancake after the second flip all cooked and ready to eat!!
Now you are ready for assembly, stack your pancakes as high as you want and cover in your favourite toppings… now enjoy!
